  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup unsalted butter (melted)
  • 1/2 cup brewed espresso or strong coffee
  • 8 oz mascarpone cheese
  • Cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan or line it with parchment paper.
  2. Melt butter and cocoa powder in a bowl until smooth.
  3. In another bowl, whisk sugar and eggs until light; stir in the melted mixture.
  4. Fold in flour gently until just combined.
  5. Pour batter into the prepared pan and bake for 25-30 minutes. Allow to cool.
  6. Mix mascarpone cheese with espresso until smooth; spread over cooled brownies.
  7. Dust with cocoa powder and refrigerate for at least two hours before serving.
