Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp fresh ginger (grated)
  • 4 garlic cloves (minced)
  • 3 green onions (sliced)
  • Juice of 1 lime
  • 1/4 cup ketchup
  • 1 tsp red pepper flakes (optional)

Instructions

  1. Prep your ingredients: finely chop garlic, green onions, and ginger.
  2. Make the marinade: In a bowl, whisk together soy sauce, brown sugar, ketchup, lime juice, ginger, and minced garlic until smooth.
  3. Marinate the chicken: Place chicken in a resealable bag or bowl and pour marinade over it; refrigerate for at least 30 minutes.
  4. Grill the chicken: Preheat grill to medium-high heat (375°F). Remove chicken from marinade (reserve some) and grill for 6-7 minutes on each side until fully cooked.
  5. Add pineapple: Grill pineapple chunks during the last few minutes until caramelized.
  6. Serve: Drizzle reserved marinade over cooked chicken and garnish with sliced green onions.

Nutrition

Keywords: For added crunch, consider incorporating macadamia nuts or swapping pineapple for mango. Make sure not to overcook the chicken for optimal tenderness.
