  • 1 lb lean ground beef
  • 1 medium sweet onion, chopped
  • 3 cloves garlic, minced
  • 28 oz fire-roasted diced tomatoes
  • 4 cups low-sodium chicken broth
  • 2 cups shredded mozzarella cheese
  • 1 cup small pasta (shells or ditalini)
  • 2 tsp Italian seasoning
  • Fresh parsley, for garnish

Instructions

  1. In a large pot over medium heat, brown the ground beef for 5-7 minutes. Drain excess fat and add chopped onion and minced garlic; sauté until fragrant.
  2. Stir in the diced tomatoes (with juices) and chicken broth. Bring to a simmer.
  3. Add the pasta and Italian seasoning; simmer for about 10-12 minutes until pasta is al dente.
  4. Stir in half of the mozzarella cheese until melted.
  5. Serve in bowls topped with remaining mozzarella cheese and fresh parsley.
