Instructions

  1. Gather and prep ingredients: chop garlic and herbs, and pat the chicken breasts dry with a paper towel.
  2. Heat 2 tbsp olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, and cook until golden brown on both sides, about 5-7 minutes per side.
  3. Once the chicken reaches an internal temperature of 165°F, add the minced garlic, thyme, and basil. Sauté for about 1 minute until fragrant.
  4. Pour in the heavy cream and chicken broth. Stir gently while gradually adding the Parmesan cheese until melted and the sauce is smooth.
  5. Cook the pasta according to the package instructions, then drain.
  6. Toss the cooked pasta and fresh spinach into the skillet with the sauce. Stir for about 2 minutes until the spinach wilts.
  7. Serve hot, garnished with extra Parmesan cheese and fresh herbs if desired.
