  • 2 thick slices of sourdough or ciabatta
  • 1/2 cup fresh mozzarella cheese
  • 1/4 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes
  • 1/4 cup pitted Kalamata olives
  • A handful of fresh basil leaves
  • 1 tablespoon butter or olive oil

Instructions

  1. Gather all ingredients and preheat a skillet over medium heat.
  2. Spread butter or drizzle olive oil on one side of each bread slice.
  3. On the unbuttered side of one slice, layer fresh mozzarella, crumbled feta, sun-dried tomatoes, Kalamata olives, and basil leaves. Top with the second slice.
  4. Place the sandwich in the heated skillet and grill until golden brown, about 3-4 minutes. Carefully flip and press down with a spatula; cook for another 3-4 minutes until both sides are crispy and cheese is melted.
  5. Remove from heat, slice in half if desired, and serve hot with a side salad or chips.
