- 2 thick slices of sourdough or ciabatta
- 1/2 cup fresh mozzarella cheese
- 1/4 cup crumbled feta cheese
- 1/4 cup sun-dried tomatoes
- 1/4 cup pitted Kalamata olives
- A handful of fresh basil leaves
- 1 tablespoon butter or olive oil
- Gather all ingredients and preheat a skillet over medium heat.
- Spread butter or drizzle olive oil on one side of each bread slice.
- On the unbuttered side of one slice, layer fresh mozzarella, crumbled feta, sun-dried tomatoes, Kalamata olives, and basil leaves. Top with the second slice.
- Place the sandwich in the heated skillet and grill until golden brown, about 3-4 minutes. Carefully flip and press down with a spatula; cook for another 3-4 minutes until both sides are crispy and cheese is melted.
- Remove from heat, slice in half if desired, and serve hot with a side salad or chips.
