  • 2 cups lettuce or spinach
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 1 tsp garlic powder
  • 1 tsp dried oregano

Instructions

  1. In a bowl, mix olive oil, lemon juice, garlic powder, oregano, salt, and pepper. Add chicken thighs and coat well. Marinate for at least 30 minutes (overnight for best flavor).

  3. Heat a grill pan or skillet over medium-high heat. Cook marinated chicken thighs for about 5-7 minutes per side until golden brown and cooked through (internal temp should reach 165°F).
  4. Slice cooked chicken into strips. Layer lettuce or spinach in bowls followed by sliced tomatoes, red onion rings, and chicken strips.
  5. Drizzle tzatziki sauce over each bowl and serve with warm pita bread on the side.
