Ingredients

Scale
  • For the Crust:
    • 1 ½ cups graham cracker crumbs
    • ¼ cup granulated sugar
    • ½ cup unsalted butter, melted
  • For the Cheesecake Filling:
    • 3 (8 oz) packages cream cheese, softened
    • 1 cup granulated sugar
    • 3 large eggs
    • 1 tsp vanilla extract
    • 1 cup sour cream
    • 2 tbsp all-purpose flour
  • For the Strawberry Topping:
    • 2 cups fresh strawberries, sliced
    • ¼ cup granulated sugar
    • 1 tsp lemon juice
  • For the Whipped Cream:
    • 1 cup heavy whipping cream
    • 2 tbsp powdered sugar
    • 1 tsp vanilla extract

Instructions

1️⃣ Prepare the Crust: Preheat your oven to 325°F (163°C). In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.
2️⃣ Make the Cheesecake Filling: In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract, sour cream, and flour until fully combined.
3️⃣ Assemble and Bake: Pour the cheesecake filling over the cooled crust. Smooth the top and bake for 50–60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
4️⃣ Chill the Cheesecake: Transfer the cheesecake to the fridge and let it chill for at least 4 hours, or overnight for best results.
5️⃣ Prepare the Strawberry Topping: In a small bowl, combine sliced strawberries, sugar, and lemon juice. Stir and let sit for 20–30 minutes to release the juices.
6️⃣ Make the Whipped Cream: In a chilled mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
7️⃣ Serve: Once the cheesecake is chilled, top it with the macerated strawberries and a generous dollop of whipped cream. Slice and enjoy this delightful dessert!

Notes

  • For extra flavor, you can also add a drizzle of strawberry syrup or a sprinkle of graham cracker crumbs on top.
  • If you want a firmer cheesecake, let it chill overnight.
  • You can substitute the fresh strawberries with other berries, like raspberries or blueberries, for a different twist.
