  • 1/2 cup fresh strawberries, diced

  2. In a bowl, cream together the melted butter and sugar until fluffy.
  3. Add the egg and mix until just combined.
  4. Gradually incorporate flour, baking powder, and salt until no dry spots remain; avoid overmixing.
  5. Grease a muffin tin lightly and spoon the dough into each cup, pressing gently to create space for the filling.
  6. In another bowl, beat cream cheese until smooth; mix in sour cream, sugar, and vanilla until creamy.
  7. Fold diced strawberries into half of the cheesecake mixture and spoon dollops into cookie cups on top of plain cheesecake filling; swirl lightly with a toothpick.
