Taco casserole is a delightful dish that combines layers of seasoned ground beef, gooey cheese, and zesty tortillas.   • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 1 can (14.5 oz) diced tomatoes
  • 10 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup sour cream
  • ¼ cup chopped green onions

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, brown the ground beef. Drain fat and stir in taco seasoning and canned tomatoes.
  3. Layer half of the corn tortillas at the bottom of the baking dish. Top with half of the beef mixture and black beans.
  4. Sprinkle half of the shredded cheese over the top. Repeat layering with remaining tortillas, beef mixture, and finish with cheese.
  5. Bake for 25-30 minutes until golden brown and bubbly. Let sit for 10 minutes before serving, garnished with green onions and a dollop of sour cream.
