Ingredients

Scale
  • 4 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast
  • 1 cup warm milk (110°F/43°C)
  • 1/4 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup mixed dried fruit (currants or raisins)
  • 1/4 cup apricot jam (for glaze)

Instructions

  1. Warm milk to about 110°F. In a bowl, mix warm milk with sugar and yeast; let sit until bubbly (about 5 minutes).
  2. In a large mixing bowl, combine flour, salt, cinnamon, nutmeg, and dried fruit. Add the yeast mixture along with melted butter and eggs.
  3. Turn onto a floured surface and knead for 8-10 minutes until smooth and elastic. The dough should feel soft but not sticky.
  4. Place in a greased bowl, cover, and let rise in a warm spot until doubled in size (about 1 hour).
  5. Punch down the risen dough gently, divide into equal portions, shape into buns, and place on a lined baking tray.
  6. Cover shaped buns with a cloth while preheating oven to 375°F (190°C). Let them rise for another 30 minutes until puffy.
  7. Bake for about 20 minutes or until golden brown. Brush warmed apricot jam over buns while still warm for a shiny finish.
