  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup diced cucumber
  • 1 cup full-fat Greek yogurt
  • 2 tbsp fresh dill, chopped
  • 2 garlic cloves, minced
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or stovetop pan over medium-high heat. Season the chicken breasts with salt and pepper. Grill for about 6-7 minutes per side until cooked through.
  2. In a bowl, mix Greek yogurt, minced garlic, diced cucumber (squeeze out excess moisture), lemon juice, chopped dill, olive oil, salt, and pepper until smooth.
  3. While the chicken cooks, chop remaining cucumber into bite-sized pieces. Optionally add diced tomatoes or bell peppers.
  4. Once the chicken cools slightly, chop into cubes and mix with cucumbers and tzatziki sauce in a large bowl.
  5. Taste and adjust seasoning if necessary. Serve chilled or at room temperature on greens or in pita bread.
