This One Pot Chicken Parmesan Pasta is an easy, no-fuss dinner that combines tender chicken, rich marinara sauce, and pasta all cooked together in one pot. Topped with melty mozzarella and Parmesan, it’s a cheesy, satisfying meal perfect for busy nights.

  • 1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 3 cups chicken broth
  • 1 (24 oz) jar marinara sauce
  • 2 cups uncooked penne or ziti pasta
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Cook the Chicken:
    • Heat olive oil in a large pot over medium heat. Season the chicken pieces with salt, pepper, garlic powder, and Italian seasoning. Add the chicken to the pot and cook for 5-6 minutes, until browned and cooked through. Remove the chicken and set aside.
  2. Add Liquids and Pasta:
    • In the same pot, pour in the chicken broth and marinara sauce, stirring to combine. Bring the mixture to a boil.
  3. Cook the Pasta:
    • Add the uncooked pasta to the pot. Reduce the heat to medium-low, cover, and simmer for 12-15 minutes, stirring occasionally, until the pasta is cooked and the sauce has thickened.
  4. Combine the Chicken and Cheese:
    • Return the cooked chicken to the pot, stirring to combine with the pasta and sauce. Sprinkle mozzarella and Parmesan cheese over the top. Cover and let it sit for 2-3 minutes, allowing the cheese to melt.
  5. Serve:
    • Garnish with fresh basil or parsley. Serve hot and enjoy!
