  • 4 large fresh eggs
  • 1 cup shredded cheddar cheese
  • 1 small onion, diced
  • 1 bell pepper (any color), diced
  • Salt and pepper to taste

Instructions

  1. Wash and dice potatoes into small cubes for even cooking.
  2. In a skillet over medium heat, melt butter or oil. Sauté diced onions and bell peppers until softened (about 5 minutes).
  3. Add cubed potatoes, season with salt and pepper, and cook until golden brown and tender (approximately 10-12 minutes), stirring occasionally.
  4. In a bowl, whisk together the eggs and season lightly with salt and pepper.
  5. Pour the whisked eggs over the cooked potato mixture in the skillet. Cook on low heat until eggs are just set (about 3-4 minutes).
  6. Sprinkle shredded cheese on top and cover briefly to melt (about 1-2 minutes). Serve immediately.
