Instructions

  1. Boil a large pot of salted water. Add rotini and cook until al dente according to package instructions. Reserve 1 cup of pasta water before draining.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add bell peppers and zucchini, cooking until tender yet vibrant.
  3. Stir in halved cherry tomatoes, salt, and pepper. Cook for a few more minutes until tomatoes soften.
