Ingredients

Scale
  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 cup salsa (mild, medium, or hot depending on preference)
  • 1 tablespoon taco seasoning (or more to taste)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder (optional, for extra heat)
  • 1 tablespoon olive oil (optional)
  • Salt and pepper to taste
  • Fresh cilantro (optional, for garnish)
  • Lime wedges (optional, for serving)

Instructions

  • Prepare the Crockpot:
    • Coat the inside of the crockpot with a little olive oil to prevent sticking (optional).
  • Season the Chicken:
    • Season the chicken breasts with taco seasoning, garlic powder, onion powder, cumin, chili powder, salt, and pepper.
  • Add the Chicken and Salsa:
    • Place the seasoned chicken breasts in the crockpot. Pour the salsa over the chicken, ensuring it’s well-covered.
  • Cook the Chicken:
    • Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
  • Shred the Chicken:
    • Once the chicken is cooked, remove it from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot and stir it into the salsa mixture to soak up all the flavors.
  • Serve:
    • Serve the salsa chicken in tacos, burrito bowls, salads, or with rice. Garnish with fresh cilantro and lime wedges if desired.
