Scale
  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 2 cups low-sodium chicken broth
  • 1 cup mixed bell peppers, chopped
  • 1 cup onions, chopped
  • 1/2 cup peas (fresh or frozen)
  • 1 tsp garlic powder
  • 2 tbsp extra virgin olive oil
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the vegetables into bite-sized pieces.
  2. In a large pot, heat olive oil over medium heat. Season chicken with salt and pepper. Sear chicken for about 5 minutes on each side until golden brown, then remove from pot.
  3. In the same pot, add onions and bell peppers; sauté for 3-4 minutes until soft.
  4. Stir in the rice, garlic powder, paprika, and thyme.
  5. Pour in chicken broth to cover the rice entirely, then add the seared chicken back into the pot.
  6. Bring to a gentle boil, then reduce heat to low and cover tightly. Simmer for 20 minutes or until liquid is absorbed.
  7. Remove from heat and let sit covered for an additional 5 minutes before fluffing with a fork.
