  • 1 lb lean ground beef
  • 1/2 cup fresh breadcrumbs
  • 1 large egg
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 14 oz can crushed tomatoes
  • 4 cups low-sodium beef broth
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, mix the ground beef, breadcrumbs, egg, minced garlic, chopped onion, salt, and pepper until well combined. Shape into small meatballs (about 1 inch in diameter).
  2. Heat olive oil in a large pot over medium-high heat. Add meatballs in batches and brown on all sides (6-8 minutes). Transfer to a plate.
  3. In the same pot, sauté diced celery and carrots until softened (4-5 minutes).
  4. Stir in crushed tomatoes and beef broth while scraping up browned bits from the pot.
  5. Add Italian seasoning and additional salt and pepper to taste. Bring to a gentle boil then reduce heat to simmer.
  6. Return meatballs to the pot and simmer covered for 20-25 minutes until cooked through.
