  • 4 cloves fresh garlic, minced
  • 1 large yellow onion, chopped
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup long-grain white rice
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 2 tbsp low-sodium soy sauce
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping the garlic and onion.
  2. In a large skillet over medium heat, sauté onions in oil until translucent (about 5 minutes). Add minced garlic and sauté for another minute.
  3. Season chicken breasts with salt and pepper, then add to the skillet. Sear both sides until golden brown (about 5 minutes each side).
  4. Pour in chicken broth and heavy cream, scraping up any browned bits from the skillet. Stir well to combine.
  5. Sprinkle uncooked rice evenly over the mixture, gently tucking it under the liquid.
  6. Cover the skillet with a lid, reduce heat to low, and simmer for 20–25 minutes or until chicken is cooked through (internal temperature of 165°F) and rice is tender.
