- 4 cloves fresh garlic, minced
- 1 large yellow onion, chopped
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup long-grain white rice
- 1 tsp paprika
- 1 tsp dried thyme
- 2 tbsp low-sodium soy sauce
- Salt and pepper to taste
- Prep your ingredients by chopping the garlic and onion.
- In a large skillet over medium heat, sauté onions in oil until translucent (about 5 minutes). Add minced garlic and sauté for another minute.
- Season chicken breasts with salt and pepper, then add to the skillet. Sear both sides until golden brown (about 5 minutes each side).

- Sprinkle uncooked rice evenly over the mixture, gently tucking it under the liquid.
- Cover the skillet with a lid, reduce heat to low, and simmer for 20–25 minutes or until chicken is cooked through (internal temperature of 165°F) and rice is tender.
