  • 1/2 cup chipotle sauce
  • 1 cup sliced bell peppers (red, yellow, green)
  • 1 medium onion (sliced)
  • 6 tortillas (flour or corn)
  • 1/4 cup fresh cilantro (chopped)
  • 2 tbsp lime juice
  • 2 tsp cumin powder
  • 1 tsp garlic powder

Instructions

  1. Slice the chicken into strips. In a bowl, combine chipotle sauce, lime juice, cumin powder, and garlic powder; coat the chicken and marinate for at least 15 minutes.
  2. Heat oil in a large skillet over medium heat. Sauté sliced bell peppers and onions for about 5 minutes until softened.
  3. Push veggies aside and add marinated chicken strips to the pan. Cook until golden brown on all sides (6-8 minutes).
  4. Stir vegetables with cooked chicken until blended well.
  5. Warm tortillas in another pan over low heat until pliable.
  6. Assemble fajitas with chicken and vegetable mixture on tortillas; garnish with cilantro.
