Spicy Shrimp & Avocado Phyllo Cups are a flavorful appetizer combining crispy phyllo dough with zesty shrimp and creamy avocado. Perfect for parties or casual gatherings!

  • 12 sheets phyllo dough
  • 1 lb large raw shrimp, deveined
  • 2 ripe avocados, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp lime juice, freshly squeezed
  • 1 tsp chili powder
  • 1 tsp paprika
  • 3 tbsp olive oil, divided
  • Optional: sour cream or Greek yogurt for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brush three sheets of phyllo dough with olive oil, cut them into 4-inch squares, and layer them in a muffin tin to create cups.
  3. Bake the phyllo cups for 10-12 minutes until golden brown.
  4. In a skillet over medium heat, sauté the shrimp in olive oil with chili powder and paprika until pink and opaque (about 3-4 minutes).
  5. In a bowl, mix diced avocados, cilantro, lime juice, and cooked shrimp.
  6. Fill each baked phyllo cup with the shrimp mixture and top with sour cream or Greek yogurt if desired.
