For the Turkey Roulade:

  • 1 ½ lbs turkey breast, boneless and skinless
  • 1 cup fresh spinach, chopped
  • ½ cup artichoke hearts, drained and chopped
  • ¾ cup cream cheese, softened
  • ¼ cup grated Parmesan cheese
  • 1/3 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for searing)

For the Gravy (optional):

  • 1 cup chicken broth
  • 1 tablespoon butter
  • 1 tablespoon flour
  • Salt and pepper to taste

Instructions

1️⃣ Prepare the turkey:
Preheat your oven to 375°F (190°C). Place the turkey breast on a cutting board and carefully butterfly it by slicing horizontally to open it up like a book. If needed, gently pound the turkey to an even thickness with a meat mallet.

2️⃣ Make the stuffing:
In a mixing bowl, combine chopped spinach, artichokes, cream cheese, Parmesan, mozzarella, minced garlic, oregano, salt, and pepper. Stir until everything is well incorporated.

3️⃣ Stuff the turkey:
Spread the spinach and artichoke mixture evenly over the flattened turkey breast, leaving about 1 inch from the edges. Carefully roll the turkey up into a log shape, securing the ends with kitchen twine or toothpicks.

4️⃣ Sear the roulade:
Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, sear the turkey roulade on all sides for about 3-4 minutes until golden brown.

5️⃣ Bake the roulade:
Transfer the skillet to the preheated oven and bake for 25-30 minutes or until the turkey reaches an internal temperature of 165°F (75°C).

6️⃣ Make the gravy (optional):
While the roulade is baking, make the gravy by melting butter in a small saucepan over medium heat. Stir in the flour and cook for 1-2 minutes to create a roux. Gradually add chicken broth, whisking until smooth. Simmer for 5 minutes, seasoning with salt and pepper.

7️⃣ Serve:
Remove the turkey roulade from the oven and let it rest for 5 minutes before slicing. Drizzle with gravy (if desired) and serve with your favorite sides.

Notes

  • You can prepare the stuffing mixture ahead of time and refrigerate it until you’re ready to stuff the turkey.
  • For a lower-fat version, substitute the cream cheese with Greek yogurt.
  • Leftovers can be stored in the refrigerator and are delicious when reheated.
