    • 1 ½ cups freeze-dried strawberries, crushed
    • 1 ½ cups golden graham cereal, crushed
    • 3 tbsp unsalted butter, melted

Instructions

1️⃣ Prepare the Crust: In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until the mixture is well-combined and crumbly. Spoon this mixture evenly into the bottom of individual serving cups (about 6-8 cups), gently pressing it down to form a firm crust. Set aside.
2️⃣ Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy. In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
3️⃣ Assemble the Cheesecake Cups: Spoon the cheesecake filling over the graham cracker crust in each cup, smoothing the tops. Refrigerate the cups for at least 4 hours or until the filling is set.
4️⃣ Prepare the Strawberry Crunch Topping: In a medium bowl, mix the crushed freeze-dried strawberries, crushed graham cereal, and melted butter. Stir until everything is evenly coated and forms a crumbly mixture.
5️⃣ Top and Serve: Once the cheesecake filling has set, generously sprinkle the strawberry crunch topping on top of each cheesecake cup. Serve chilled and enjoy!

Notes

  • If you want a burst of color, garnish each cup with fresh strawberry slices just before serving.
  • Use freeze-dried strawberries for the crunch topping to achieve the desired texture. Fresh strawberries will not give the same crispy effect.
  • You can make these cheesecake cups a day ahead to save time—just refrigerate overnight!
