For the Peppers:

  • 1 lb mini sweet peppers (about 2025 peppers)
  • 1 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (plus more for garnish)
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste

Optional Add-ins:

  • 1/2 cup cooked crumbled sausage or ground beef
  • 1/4 cup chopped spinach
  • 1/4 teaspoon red pepper flakes (for a spicy kick)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Peppers:
    • Wash and dry the mini peppers. Cut each pepper in half lengthwise and remove the seeds and membranes.
  3. Make the Filling:
    • In a medium mixing bowl, combine the cream cheese, mozzarella, Parmesan, parsley, garlic, onion powder, salt, and pepper. Mix until well combined.
    • If desired, fold in cooked sausage, spinach, or red pepper flakes for added flavor.
  4. Stuff the Peppers:
    • Spoon the filling into each pepper half, smoothing the tops. Arrange them on the prepared baking sheet.
  5. Bake the Peppers:
    • Bake in the preheated oven for 15-20 minutes, or until the peppers are tender and the filling is slightly golden and bubbly.
  6. Serve:
    • Remove from the oven and let cool slightly. Garnish with additional parsley if desired and serve warm.
