  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup full-fat Greek yogurt
  • 1 medium Persian cucumber, diced
  • 2 tbsp fresh dill, chopped
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or skillet over medium-high heat. Season chicken breasts with salt and pepper and cook for about 6-7 minutes on each side until golden brown and cooked through.
  2. While the chicken is cooking, in a bowl, combine Greek yogurt, minced garlic, diced cucumber (drained), chopped dill, lemon juice, olive oil, salt, and pepper. Mix until well blended.

  4. Once cooked chicken has cooled slightly, chop it into bite-sized pieces and add to the veggie mix along with the tzatziki dressing. Stir gently to coat all ingredients.
