  • 2 large Russet potatoes
  • 8 oz sirloin or ribeye steak
  • 1 cup sharp cheddar cheese, shredded
  • ½ cup sour cream
  • 2 tbsp chives or green onions, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the russet potatoes, poke holes in them with a fork, rub with olive oil, season with salt, and bake directly on the oven rack for 45-60 minutes until tender.
  2. While the potatoes bake, cut the steak into bite-sized pieces. In a hot skillet with olive oil over medium-high heat, sear the steak bites for about 3-5 minutes until browned. Season with salt and pepper.
  3. Once cooked, set aside the steak and prepare toppings: shred cheddar cheese and chop chives or green onions.
  4. When potatoes are ready, slice them open lengthwise and fluff the insides. Load each potato with seared steak bites, shredded cheddar cheese (allowing it to melt), sour cream, and chives.
