Ingredients

Scale

For the Scones:

  • 2 cups all-purpose flour
  • ⅓ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • Zest of 2 lemons
  • 6 tablespoons cold unsalted butter, cubed
  • ½ cup heavy cream, plus more for brushing
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Lemon Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

1️⃣ Preheat the oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

2️⃣ Mix the dry ingredients:
In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and lemon zest.

3️⃣ Cut in the butter:
Add the cold butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

4️⃣ Combine wet ingredients:
In a separate bowl, whisk together the heavy cream, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined.

5️⃣ Shape the dough:
Turn the dough out onto a lightly floured surface and gently knead it into a ball. Flatten into a 1-inch-thick disc and cut into 8 wedges. Transfer the wedges to the prepared baking sheet, spacing them slightly apart. Brush the tops with heavy cream.

6️⃣ Bake the scones:
Bake for 15–18 minutes, or until the scones are golden brown. Let cool slightly on a wire rack.

7️⃣ Prepare the glaze:
In a small bowl, whisk together powdered sugar, lemon juice, and lemon zest until smooth. Drizzle the glaze over the cooled scones.

8️⃣ Serve:
Enjoy your scones warm or at room temperature with a cup of tea or coffee.

Notes

  • Substitute heavy cream with buttermilk for a tangier flavor.
  • Add blueberries or raspberries for a fruity twist.
  • Scones can be stored in an airtight container for up to 3 days or frozen for longer storage.
