Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  • Mix the Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • Make the Dough:
    • In a large bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy, about 2-3 minutes.
    • Add the egg, lemon zest, lemon juice, and vanilla extract to the butter mixture, and beat until smooth.
    • Gradually add the dry ingredients and mix until just combined.
  • Form the Cookies:
