Scale
  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups canned white beans (such as cannellini or Great Northern)
  • 4 cups low-sodium chicken broth
  • 1 can (4 oz) diced green chiles
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 8 oz cream cheese, softened
  • Juice of 1 lime
  • Fresh cilantro for garnish (optional)

Instructions

  1. Set your Instant Pot to sauté mode. Add a drizzle of oil and sauté the diced onion until translucent, about 3-4 minutes.
  2. Stir in the minced garlic, cumin, and chili powder; cook for an additional minute until fragrant.
  3. Layer in the chicken breasts, drained white beans, green chiles, and chicken broth; ensure even distribution.
  4. Lock the lid and cook on high pressure for 15 minutes. Allow natural release for 10 minutes before switching to quick release.
  5. Remove chicken using tongs and shred inside the pot. Stir in softened cream cheese and lime juice until smooth.
  6. Serve warm, garnished with fresh cilantro if desired.
