  • 1 lb ground beef (80/20)
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 1/4 cup ketchup
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp brown sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Sauté onion in a skillet over medium heat until translucent, then add minced garlic and cook until fragrant.
  3. In a bowl, combine ground beef, breadcrumbs, eggs, sautéed onion and garlic, herbs, salt, pepper, and brown sugar; mix gently.
  4. Shape the mixture into a loaf on the prepared baking sheet.
  5. Whisk together balsamic vinegar and ketchup; brush half over the meatloaf.
  6. Bake for about 60 minutes or until internal temperature reaches 160°F (70°C), brushing with remaining glaze during the last 15 minutes.
  7. Allow to rest for 10 minutes before slicing.
