  • 9 no-boil lasagna noodles
  • 2 cups fresh spinach
  • 1 cup sliced mushrooms
  • 1 cup thinly sliced zucchini
  • 15 oz ricotta cheese
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 2 tbsp olive oil
  • 1 tsp dried Italian herbs (oregano and basil)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
  2. In a large skillet, heat olive oil over medium heat. Sauté garlic and onions until fragrant (3–5 minutes).
  3. Add mushrooms and zucchini; cook until tender (5–7 minutes). Season with salt, pepper, and herbs.
  4. In a bowl, mix ricotta cheese with one beaten egg, salt, pepper, and spinach.
  5. Layer the lasagna: spread marinara sauce at the bottom of the dish, add noodles, half of the ricotta mixture, sautéed vegetables, more sauce, and cheese; repeat layers ending with noodles topped with remaining sauce and mozzarella.
  6. Cover with foil and bake for 25–30 minutes; remove foil for the last 10 minutes for a golden crust.
  7. Let rest for 10 minutes before serving.
