Ingredients

Scale
  • 1 pound fresh gnocchi
  • 4 cups fresh spinach
  • 1 can (14 oz) marinated artichokes, drained
  • 8 oz cream cheese
  • 1 cup chicken broth (low-sodium)
  • 1 cup freshly grated Parmesan cheese (divided)
  • 2 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a large baking dish with nonstick cooking spray.
  2. In a large skillet, heat olive oil over medium heat. Add diced onions and minced garlic; sauté until onions are translucent (about 3-4 minutes).
  3. Add fresh spinach to the skillet and stir until wilted. Then mix in the drained artichokes and cook for an additional 2-3 minutes.
  4. Lower the heat and incorporate the cream cheese into the mixture until melted. Gradually pour in chicken broth while stirring until smooth.
  5. Gently fold in cooked gnocchi and half of the grated Parmesan cheese until evenly coated.
  6. Transfer the mixture to the prepared baking dish, sprinkle remaining Parmesan on top, and bake for 25-30 minutes or until bubbly and golden brown.
  7. Let it rest for about 5 minutes before serving.
