Chicken Zucchini Feta Fritters (Low Carb, High Protein)

Juicy chicken and zucchini fritters loaded with feta, mozzarella, and parmesan, served with a cool lazy ranch dip. Low carb, high protein, and ready in 25 minutes.

Fritters:

  • 1 lb (450g) ground chicken
  • 1 medium zucchini, grated and squeezed dry
  • 1 large egg
  • 2 scallions, diced
  • 2 tablespoons fresh dill, chopped
  • â…“ cup (35g) all-purpose flour (or almond flour)
  • 1 teaspoon salt
  • ½ teaspoon each garlic powder, onion powder, and paprika
  • 4 oz (115g) feta cheese, crumbled
  • 1 cup (110g) shredded mozzarella
  • ¼ cup (25g) grated parmesan
  • 3 tablespoons olive oil, for cooking
  • Lemon wedges, for serving

Lazy Ranch Dip:

  • ½ cup + 1 tablespoon (100g) Greek yogurt
  • 3 tablespoons mayonnaise
  • 1½ tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • 2 tablespoons milk
  • ½ teaspoon each salt and garlic powder
  • ¼ teaspoon dill weed

Instructions

  • In a large bowl, combine the ground chicken, squeezed zucchini, egg, scallions, dill, flour, salt, garlic powder, onion powder, paprika, feta, mozzarella, and parmesan. Mix with your hands until evenly combined.
  • Using about â…“ cup of the mixture per fritter, form a ball and flatten it into a patty about ¾ inch thick. Place on wax paper and repeat with the remaining mixture.
  • Heat about 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the fritters without overcrowding the pan — work in batches.
  • Cook for 4–5 minutes per side, lowering the heat to medium-low to prevent burning. Add more oil between batches as needed. Cook until deeply golden and the internal temperature reads at least 165°F.
  • Make the ranch: Whisk together the Greek yogurt, mayonnaise, red wine vinegar, olive oil, milk, salt, garlic powder, and dill weed until smooth. Taste and adjust seasoning.
  • Serve the fritters hot with lemon wedges and the ranch dip.

Notes

Squeeze the grated zucchini as dry as you can — excess moisture is the main reason fritters fall apart. Using almond flour instead of all-purpose cuts the carbs roughly in half. Ground turkey works as a direct substitute for chicken, and any shredded cheese works in place of the mozzarella. To bake instead of frying, brush with olive oil and bake at 400°F for about 20 minutes, flipping halfway, until the internal temperature reaches 165°F. Store leftovers in an airtight container in the fridge for up to 4 days or in the freezer for up to 3 months. Nutritional information is per fritter and covers the fritters only.
