  • 4 boneless, skinless chicken breasts
  • 2 medium zucchini, sliced
  • 2 bell peppers (1 red, 1 yellow), chopped
  • 1 medium eggplant, diced
  • 4 cloves garlic, whole
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh basil, chopped
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly coat a large baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper; place them in the bottom of the baking dish.
  3. In a bowl, toss zucchini, bell peppers, eggplant, garlic, olive oil, thyme, and basil until well combined.
  4. Layer the vegetable mixture over the chicken in the baking dish.
  5. Bake for 45-50 minutes or until the chicken is cooked through and vegetables are tender.
  6. If using Parmesan cheese, sprinkle it over the top during the last 10 minutes of baking for a golden finish.
