  • 4 large bell peppers (red, yellow, or green)
  • 1 lb ground meat (beef, turkey, or chicken)
  • 1 cup cooked rice or quinoa
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds. Arrange them upright in a baking dish.
  3. In a skillet over medium heat, sauté the onion and garlic until translucent. Add the ground meat and cook until browned; drain excess fat.
  4. Stir in the cooked rice/quinoa and spices until well mixed and heated through.
  5. Generously fill each bell pepper with the mixture and top with mozzarella cheese.
  6. Bake uncovered for 25-30 minutes until peppers are tender.
