  • 1 cup fresh or store-bought gnocchi
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 1 cup low-sodium beef broth
  • 2 cups mashed potatoes (homemade or store-bought)
  • 1 cup grated sharp cheddar cheese
  • Salt and pepper to taste
  • 1 tsp thyme or rosemary (optional)

Instructions

  1. In a large skillet, heat 1 tbsp olive oil over medium heat. Add onions and carrots; sauté until softened.
  2. Increase heat; add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  3. Stir in frozen peas, beef broth, salt, pepper, and herbs. Let simmer until thickened.
  4. If using store-bought mashed potatoes, warm them up. Spread half in a greased baking dish.
