  • 4 medium Yukon Gold potatoes (about 2 lbs), peeled and cubed

  • 2 tbsp butter

Instructions

  1. Preheat oven to 375°F (190°C) and grease a casserole dish.
  2. In a skillet over medium heat, brown the ground beef; drain excess fat. Add diced onions and sauté until soft.
  3. Boil cubed potatoes in salted water until fork-tender (about 15 minutes). Drain and return to pot.
  4. Mash potatoes with milk, butter, garlic powder, salt, and half of the cheese until creamy but slightly chunky.
  5. Layer half the mashed potatoes in the casserole dish, followed by the ground beef mixture, then top with remaining mashed potatoes.
  6. Sprinkle with remaining cheddar cheese and bake covered for 25 minutes. Remove foil and bake an additional 10-15 minutes until golden brown.
