  • 1 cup dried red beans
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 1 stalk celery, diced
  • 3 cloves garlic, minced
  • 2 tsp Cajun seasoning (adjust to taste)
  • 1 cup long-grain white rice
  • 4 cups low-sodium vegetable broth or water
  • 2 bay leaves
  • 1 cup smoked sausage, sliced (optional)

Instructions

  1. Soak the red beans overnight. Drain and rinse before use.
  2. In a large pot over medium heat, sauté the onion, bell pepper, celery, and garlic until softened (about 5 minutes).
  3. Add the soaked beans and vegetable broth/water; bring to a boil. Reduce heat to low, cover, and simmer for about 45 minutes.
  4. Stir in Cajun seasoning and bay leaves; continue simmering for another 15 minutes.
  5. Cook the rice according to package instructions while the beans simmer.
  6. If using smoked sausage, add it to the bean mixture during the last 15 minutes of cooking.
  7. Remove bay leaves and serve hot over rice. Garnish with chopped green onions if desired.
