  • 1 lb lean ground beef
  • 1 cup cooked rice
  • 1/4 cup fresh cilantro, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup zucchini, diced
  • 14.5 oz can diced tomatoes
  • 4 cups low-sodium chicken broth
  • 2 tsp cumin
  • 2 tsp paprika
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, cooked rice, cilantro, garlic, onion, salt, pepper, cumin, and paprika. Mix gently until just combined.
  2. Heat olive oil in a large pot over medium heat. Shape the mixture into 1-inch meatballs and sear until browned on all sides. Set aside.
  3. In the same pot, sauté carrots and zucchini until softened (about 4-5 minutes).
  4. Add chicken broth and diced tomatoes; bring to a simmer while scraping any browned bits from the bottom of the pot.
  5. Return meatballs to the pot and let simmer for 20 minutes.
  6. Stir in lime juice before serving and garnish with extra cilantro.
