  • 1 lb Brussels sprouts, halved
  • 3 sprigs fresh thyme
  • 3 sprigs fresh rosemary
  • 4 cloves garlic, whole
  • 1 cup low-sodium chicken broth
  • ½ cup pomegranate seeds (optional)

Instructions

  1. Prep your ingredients by washing and chopping vegetables into bite-sized pieces.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper; add to the skillet and sear for about 5 minutes on each side until golden brown and cooked through (165°F).
  3. Add chopped carrots, sweet potatoes, Brussels sprouts, and garlic around the chicken in the skillet. Cook for an additional 8–10 minutes until vegetables begin to soften.
  4. Pour in chicken broth and add thyme and rosemary sprigs. Bring to a gentle boil; reduce heat to simmer.
  5. Cover the skillet and let it simmer for about 15–20 minutes until vegetables are fork-tender.
  6. If desired, sprinkle with pomegranate seeds before serving.
