  • 1.5 lbs boneless, skinless chicken thighs
  • 2 medium carrots, chopped
  • 2 medium Yukon Gold potatoes, diced
  • 1 large sweet onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tsp olive oil
  • 1 cup red wine
  • 3 tbsp tomato paste
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season chicken thighs with salt and pepper. Sear until golden brown on both sides; remove and set aside.
  2. In the same pot, sauté onions, carrots, and garlic until softened (about 5 minutes). Stir in tomato paste.
  3. Pour in red wine and scrape up any browned bits from the pot; simmer for about 3 minutes.
  4. Return the chicken to the pot with diced potatoes; pour in chicken broth until everything is submerged. Bring to a gentle boil.
  5. Reduce heat to low; add thyme and bay leaves. Cover and simmer for 30-40 minutes until chicken is tender.
  6. Discard bay leaves before serving hot.
