  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 4 cups low-sodium chicken broth
  • 1 cup fresh corn (or thawed frozen corn)
  • 2 tbsp taco seasoning
  • ½ cup chopped fresh cilantro
  • Juice of 1 lime

Instructions

  2. In a large pot over medium heat, add 2 tbsp olive oil and sauté 1 chopped onion and 2 minced garlic cloves until translucent.
