  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 28 oz canned diced tomatoes (fire-roasted preferred)
  • 4 cups low-sodium beef or vegetable broth
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 2 tsp Italian seasoning
  • 2 cups fresh spinach or kale
  • 1 cup shredded mozzarella cheese

Instructions

  1. Set your Instant Pot to sauté mode. Add the ground meat, chopped onion, and minced garlic; cook until browned (5–7 minutes).
  2. Stir in diced tomatoes (with juice), broth, and Italian seasoning, scraping the bottom of the pot.
  3. Break lasagna noodles into smaller pieces and stir into the mixture.
  4. Secure the lid on your Instant Pot and set it to high pressure for 5 minutes.
  5. Once cooking is complete, carefully release the pressure. Stir in ricotta cheese until melted and fold in spinach or kale.
  6. Serve hot topped with shredded mozzarella cheese.
