  • 1 lb lean ground beef
  • 1 medium onion, finely chopped
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 1/2 cup beef broth (low-sodium)
  • 2 tbsp Worcestershire sauce
  • 2 large Yukon Gold potatoes, peeled and chopped
  • 1/4 cup butter
  • 1/4 cup heavy cream
  • 1 sheet puff pastry (thawed)

Instructions

  1. Preheat oven to 400°F (200°C) and grease a muffin tin.
  2. In a skillet over medium heat, brown the ground beef with the chopped onion until fragrant; drain excess fat.
  3. Add diced carrots and frozen peas; stir well. Pour in beef broth and Worcestershire sauce, simmer until thickened (about 10 minutes).
  4. Boil peeled potatoes until fork-tender. Drain and mash with butter, cream, salt, and pepper until fluffy.
  5. Roll out the puff pastry and cut circles to fit muffin cups. Fill each cup with meat mixture, followed by a spoonful of mashed potatoes.
  6. Bake for 20-25 minutes until golden brown.
