Ingredients

Scale
  • 34 boneless skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1 package (16 oz) store-bought gnocchi
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach (optional)
  • 1 tsp Italian seasoning
  • 1 cup panko breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a large baking dish.
  2. In a skillet over medium heat, sauté seasoned chicken breasts for about 5-7 minutes per side until golden brown. Let rest before slicing.
  3. In the same skillet, sauté minced garlic until fragrant, about 30 seconds.
  4. Boil gnocchi according to package directions; they are ready when they float. Drain and combine with sliced chicken and garlic.
  5. In a bowl, mix the Alfredo sauce with the chicken-gnocchi mixture and spinach if using. Stir until evenly coated.
  6. Transfer to the baking dish, top with Parmesan cheese and panko breadcrumbs, then bake for 20-25 minutes until bubbly and golden brown.
  7. Allow to cool slightly before serving.
