  • 34 boneless, skinless chicken breasts
  • 1 cup low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 3 cloves fresh garlic, minced
  • 8 oz cream cheese (full-fat)
  • 1 tsp Italian seasoning
  • 8 oz spaghetti noodles
  • Salt and pepper to taste
  • Freshly grated parmesan cheese for serving

Instructions

  1. Place chicken breasts in the bottom of the crockpot. Pour in chicken broth and add diced tomatoes and minced garlic.
  2. Spread cream cheese over the top of the chicken mixture.
  3. Sprinkle Italian seasoning over everything and add uncooked spaghetti noodles directly on top.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. Once cooked, shred the chicken with two forks right in the pot and stir until combined.
  6. Serve hot with freshly grated parmesan cheese on top.
