  • 3 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 2 carrots, chopped
  • 2 stalks celery, diced
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 16 oz store-bought gnocchi
  • 2 cups fresh spinach or kale
  • 2 tsp fresh thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery until onions are translucent (about 5 minutes). Add minced garlic and cook until fragrant.
  2. Add cubed chicken breasts and stir for about 5 minutes until slightly browned. Pour in the chicken broth and bring to a boil.
  3. Add gnocchi once boiling; reduce heat to simmer for 3-4 minutes until gnocchi floats.
  4. Gradually stir in heavy cream; let simmer for another 5 minutes.
  5. Fold in spinach or kale and cook for about 2 minutes until wilted; season with salt, pepper, and thyme.
