  • 2 whole garlic bulbs
  • 8 oz cream cheese (full-fat)
  • 1 cup sour cream (full-fat)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh parsley or chives (finely chopped)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the tops off the garlic bulbs and drizzle with olive oil. Wrap them in aluminum foil.
  3. Roast the wrapped garlic on a baking sheet for 30-35 minutes until soft and golden brown.
  4. Let cool slightly, then squeeze the roasted cloves into a mixing bowl.
  5. Add cream cheese, sour cream, salt, pepper, and fresh herbs to the bowl. Blend until smooth using a hand mixer or food processor.
  6. Adjust seasoning as needed and chill in the fridge for at least one hour before serving.
  7. Serve with your choice of dippers like crunchy vegetables or crispy chips.
