  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente (about 8–10 minutes). Drain, reserving some pasta water.
  2. Heat olive oil in a large skillet over medium heat. Add shrimp, seasoning with salt and pepper, and cook until pink and opaque (3–4 minutes per side).
  3. Stir in minced garlic and fresh spinach; sauté for about 1 minute until spinach wilts.
  4. Reduce heat, add ricotta and Parmesan cheese to the skillet, stirring until combined into a creamy sauce.
  5. Incorporate the drained pasta into the skillet, mixing thoroughly. If needed, add reserved pasta water for desired consistency.
  6. Finish with a drizzle of fresh lemon juice before serving.
