  • 1/2 cup oil-packed sun-dried tomatoes, chopped
  • 4 cups fresh spinach
  • 1 cup heavy cream

  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Cook the spaghetti in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant (about 30 seconds). Add spinach and stir until wilted.
  3. Mix in the sun-dried tomatoes and cook for an additional 2 minutes. Pour in the heavy cream and stir until smooth.
  4. Reduce heat to low; gradually add Parmesan cheese while stirring. Adjust sauce consistency with reserved pasta water as needed.
  5. Toss drained spaghetti into the sauce until well coated. Season with salt and pepper to taste. Serve immediately, topped with extra Parmesan if desired.
