Instructions

  1. Slice the eggplant into half-inch rounds and sprinkle both sides with salt. Let sit for 20 minutes to draw out moisture.
  2. Rinse off the salt and pat the eggplant slices dry. Brush lightly with olive oil.
  3. Set up a breading station with one bowl of flour, another with beaten eggs, and a third with breadcrumbs mixed with Parmesan cheese. Dip each slice in flour first, then egg, followed by breadcrumbs.
  4. Preheat the air fryer to 375°F (190°C). Arrange breaded eggplant slices in a single layer and air fry for 10-12 minutes until golden brown.

  6. Bake in the air fryer at 350°F (175°C) for an additional 5-7 minutes until bubbly and golden.
